Chicken Tonight

It’s been busy lately… I’ve also been a bit lazy lately and haven’t really scanned through my Food magazines for new adventures in cooking. But next week will be different, I promise, I think.

When you’re in a time crunch and have a million other things to do, I have learned time and time again that baked chicken does the trick. I didn’t even bother being creative as I marinated my two leg quarters with salt, pepper, white pepper, onion powder, garlic powder and seasoning salt. I thought it’ll be pretty cool to get some home grown basil from the backyard and added it on the chicken as garnish (it didn’t work out quite as I expected).

Rub olive oil, seasoning salt and pepper all over cut up potatoes and that’s your “fast food” dinner.

Although it’s not the most creative of meals, what I like most about this is the simplicity and quickness. In 400 degree heat in a conventional oven, flipping once every 20 minutes, I came up with dinner while I tidied the rest of the house a bit.
