Warm Lemon (Game) Hen

Things have been quite busy this past week. It doesn’t help that extreme heat deteriorates my physical health too. Anyway, in lieu of a hard week, it’s been rather challenging to get the motivation to cook an actual meal (that’s why we’ve been eating out a lot more this week).

I’ve realized that baking is so much easier than anything else when you’re just feeling tired and lazy. So with that said, I introduce to you warm lemon game hen (yes, please excuse the non-creative name). This recipe was inspired by Sonoma Chicken Coop’s Warm Chicken Vinaigrette. I opted to lose the capers since the husband is not a fan of them.

Basically, after towel drying the hen, marinate with salt, pepper, garlic powder, seasoned salt, onion powder, thyme and whatever else you please. Stuff some garlic bit throughout the chicken. Then squeeze lemon throughout it. I have learned through this experience that it’s better to marinate this overnight simply for better flavor enhancement. After, peel the potatoes and cut them into cubes.

Remember to drizzle virgin oil on the bottom of the pan as well as on top of the potatoes. Season the potatoes with salt, pepper and seasoning salt (plus whatever else you please). Stick it in the oven at 375 for 20 minutes (turn), then for another 15-20 minutes (depending on how powerful your oven is).

And there you go!
