Leg Quarters

Perhaps it’s the busyness of the day itself, or the fact that it’s the day after the weekend, but Mondays are days where I’m not into being creative and just want to get a decent meal cooked just so we can have a hearty dinner together. Now, what is simple yet tasty? Why leg quarters of course! A leg quarter per person can easily become a scrumptious meal in 40 minutes.

After a bit of experimenting with sauces and what not, I came up with a little somethin’ somethin’ of my own. Marinate the leg quarters with salt, pepper, garlic powder and crushed red peppers. In a Ziploc bag, pour in some Yoshida sauce(can be found at Costco), mix with a bit of teriyaki marinade, add more crushed red peppers and a teaspoon of hot sauce and shake, shake, shake! Throw the leg quarters in the bag and leave it in the fridge overnight. In the morning, I like to turn the bag around so the other side of the quarters are marinated as well. I tried marinating for a few hours, but the flavors just don’t soak in as well. Bake in an oven for 40 minutes at 375, turning once.

And there you have it – Monday night’s simple dinner! No mess no fuss!
